Whilst in Ireland, checking on the progress of our House, we purchased 8 fish from a local Trout farm.
We barbequed 4 of the fish whole, and placed fillets from the remainder into a friends small portable smoker. This was my first taste of freshly caught and smoked trout. It was superb.
I was instantly converted. I tried to purchase a smoker for myself, but I had problems locating a manufacturer. I mentioned this to a friend who happened to own a small sheet metal fabrication plant. He quickly built a prototype based on my friends smoker, but with a few improvements.
